Make roux with equal parts flour and butter cook until flour is lightly brown and nutty-smelling. Stir in roux until soup is desired thickness. Sprinkle with paprika and serve.

	♥ 4:30pm is_potato: Last minute recipe for potato-leek soup. Melt 6T (3/4 stick) butter in large saucepan over medium-low heat. Stir in 4-5 pounds (11 cups) of sliced and washed leeks (white and light green parts only) with 2 cloves minced garlic. Cover and cook until leeks tender, 15-20 min. Stir in 6 cups low-sodium chicken broth, 5 medium red potatoes (1 3/4 lbs) cut into 1/2 inch pieces, 1 tsp minced fresh thyme (or 1/4 tsp dried), 2 bay leaves, 1 tsp salt. Simmer and cook until potatoes are tender, 15-20 min. Smash some of the potatoes against the side of the pot to thicken the soup. Remove bay leaves and season w/salt and pepper to taste (paprika works, too).

	♥ 4:30pm is_potato: Last minute recipe for potato-leek soup. Melt 6T (3/4 stick) butter in large saucepan over medium-low heat. Stir in 4-5 pounds (11 cups) of sliced and washed leeks (white and light green parts only) with 2 cloves minced garlic. Cover and cook until leeks tender, 15-20 min. Stir in 6 cups low-sodium chicken broth, 5 medium red potatoes (1 3/4 lbs) cut into 1/2 inch pieces, 1 tsp minced fresh thyme (or 1/4 tsp dried), 2 bay leaves, 1 tsp salt. Simmer and cook until potatoes are tender, 15-20 min. Smash some of the potatoes against the side of the pot to thicken the soup. Remove bay leaves and season w/salt and pepper to taste (paprika works, too).
