Here's the synopsis I sent: "Wendy del Formaggio says Gruyere is a melting cheese, the sweat is butterfat coming to the surface and she would eat it, but doesn’t want to take responsibility for your health so recommended throwing it out. She compared it to melting cheese on a pizza then refrigerating the leftovers and heating them again." That pretty much covers it, right? Threemoons, I read her your comment over the phone.

You can kinda theoretically do it in your fridge if you turn your fruit drawer into a cheese cave (you need high humidity), but it's still too cold. And you can't age a cut piece of cheese.
