HyperDose, my Polish mother learned Italian-American cooking from our kind neighbors. Mr. DePasquale's definition was, "It ain't gravy until you add the meat." And boy did he add meats! Pork ribs, meatballs, sausage. He made real ragus. The weather being on the Spring-like side, I think I'll go lighter and forego the meats.

Ah that makes a lot more sense. Thank you for the clarification. I usually make my sauces on the "young" side if I'm doing something like pizza, where it will cook more. Developing a thinner arrabbiata sauce (like Rao's) is next on the list.

Good timing with checking the comments board because I've been cooking up homemade sauces too. It's especially great to be able to take advantage of having New Jersey tomatoes to use.

I'm actually just watching the over-the-air PBS subchannel All Arts but am going for a walk soon and will listen to WFMU on the portable radio.

If you can tolerate battle shopping for thrift store rejects that are on the way to the land fill, the Goodwill Outlet in Olympia will do. You may get bumped by a speed freak with an ACDC tattoo on her forehead or a team of Ethiopians waiting to loot the shoe bin. I have scored folding chairs, trucker hats and blankets. It's a good stop to get disposable camping gear. Lots of junkikes in the parking lot.

After the violent thrift shopping head across the street to the vegan mexican restaurant for the nachos or make believe meat fajitas. Then walk through the parking lot to the Filipino lady for a $10.00 haircut. A stop in Olympia is almost worth it, and getting the hell our of there is satisfying.
