i do both styles of brisket. the braised, tomato-y kind i just had for rosh hashanah and at least one low-and-slow over the summer (2 or more in a good summer!)

Yes, low and slow. The thing about brisket, is it's a hard working muscle. in a pot on top of the stove it takes longer to go off than a chuck, but when it does - oh man! I love it for hot sandwiches the best.
