Hákarl or kæstur hákarl (Icelandic pronunciation: [ˈhauːkʰardl̥]) (Icelandic for "shark") is a national dish of Iceland consisting of a Greenland shark (Somniosus microcephalus) or other sleeper shark which has been cured with a particular fermentation process and hung to dry for four to five months. Hákarl is an acquired taste;[1] it has a very particular ammonia-rich smell and fishy taste.

Hákarl is served as part of a þorramatur, a selection of traditional Icelandic food served at þorrablót in midwinter. It is readily available in Icelandic stores and is eaten year round.

Yeah, important dude. Made a lot of great records. Nice of you to remember him. I just got the boxed set of Bill Evans at the Village Vanguard and Orrin said they started recording and during the first song, there was a power failure! They put the partial take on the boxed set. Fortunately, it wasn't an omen--the rest of the evening was marvelous, and he recorded it all beautifully.

I live a stone's throw from Fantasy Records and down the road three or four miles from El Cerrito, where he died. I'd love to think I crossed paths with him at Trader Joe's or something like that. His work with Evans was wonderful, but just the tip of the iceberg for his catalog.
