@UM 10:14: This afternoon I'll be taking a 14-lb. turkey from its brine and roasting it up, stuffed with herbs from our garden, segments of clementines, onions and apples, and diced carrots and celery. This is the turkey Philo's company doles out each year, usually the Friday before Thanksgiving, but didn't manage it until the Monday before. Too late for thawing, brining and roasting on Wednesday as needed. So it's been kept in his office fridge in the interim. This weekend will be T-giving redux. :)
