In Britain, the vocal filler we call “ummm,” is written as “errrr” instead. This fascinates me, as those look like completely different sounds, but I don’t think the sounds are actually different in the two dialects.

Yes, but I don't think it varies much between dialects. I think that the sound is not easily spellable, and different dialects just developed different conventions of how to represent it. Just as how animal sounds are spelled strangely differently in different languages.
