Woods - between hotspot and laptop is as secure as you make it (enable encyrption and set a strong password). Between the phone and the tower it's possible to use signal sniffers to see the phone connection, but the data should be encrypted - people will be able to see that your phone is there and connected but shouldn't be able to get at any of the traffic. And of course you can layer a VPN on top of all that to hide your IP.
