I have more eggplant then I know what to do w/ in my garden, but only know stirfry recipes. It's not a really a thing in Mexico, otherwise it's other East Asian recipes. Any recipes welcome. I like to learn! (having bok choi, carrots, chilis (of course), sesame noodles, miso sauce, and soy, and an egg right now. I now have ghost peppers longer then my hand.

@GST: My Indian-American friend gave me lessons, and she said it took her teen years-20s to figure out what she was doing. I usually just make West African curries (there is an African market here, so it's easier to get ingredients).
