Turning over the toy box and jamming together the gloriously mismatched musical Lincoln Logs, Legos and Tinker Toys from Tin Pan Alley pluggers, pickled egg tavern weepers, lockstep soul ensembles, skinny-tie power poppers, Eurotrash ravers, moontanned art school rockers, drunken soccer anthems and anything else that seems like a good idea at the time. There are no guilty pleasures.

Uncle Michael’s Pimento Cheese Spread/Dip

Ingredients:

8 oz. grated orange extra sharp cheddar (not any fancy brand!)
4 oz. cream cheese, room temperature
4 oz. mayonnaise
1 tsp. hot sauce (I prefer Melinda’s Original Habanero XXXtra Hot Sauce)
2-4 scallions (depending on size) finely sliced
1 four-ounce jar of diced pimientos (if substituting roasted red peppers, add a ¼ tsp salt)

Instructions:

With a hand mixer, cream the cream cheese, mayo and hot sauce.
Fold in grated cheddar, scallions and pimientos

It's just after noon in Philadelphia.

@Brian, there are cultural/regional reasons for adding annatto to cheddar in the US. It adds no flavor or texture to the cheese, thus it doesn't change it. Therefore, looking down on orange cheese is simple snobbery.

I dunno. I read recipes that call for turmeric or, remarkably, paprika, noting that the ingredients add nothing flavor-wise, but give color. To my untrained palette, both have flavors, but I could be making it up. Still, adding solely for color seems...fair.

@Sweet Corn Lizzie: Maybe this critic has an answer: " Critic Tim Sendra, in his album review of The Sonny Side of Cher, gave the song a mixed review: "The only track that has any real zest is the Bono-written novelty 'Bang Bang (My Baby Shot Me Down),' the kind of dramatic song Cher could knock out in her sleep but also a song with no real heart."

Colin Blunstone of The Zombies is one of those vocalists who got better with age. Gary Brooker is another.

Thanks for that pimento cheese recipe! In return, here is my macaroni salad recipe:

Serves: serves 8-10

Ingredients:

1 pound ditalini pasta (sometimes called "salad pasta"), or other short pasta or shell
3 hard boiled eggs, diced
1 cup frozen peas, cooked according to package directiond
2 celery ribs, minced
1 red bell pepper, peeled, seeded and minced
¼ sweet onion, minced
¼ cup cornichons (baby gherkins), chopped
1 cup mayonnaise (make your own, or use Kewpie Brand Japanese, or whatever)
¼ cup plus 1 tablespoon sweet pickle juice
2 teaspoons granulated sugar
1½ tablespoons Dijon mustard
Kosher salt and freshly ground black pepper
Chopped parsley if desired.

Instructions:

Cook the pasta in salted water according to the package directions, Drain in a colander and rinse under
cold water until cooled. Shake the colander to toss the pasta, and drain for about 5 minutes, tossing
occasionally.

Transfer the drained pasta to a large bowl and add the eggs, peas, celery, red bell pepper, onion and cornichons.
Mix the mayonnaise, pickle juice, sugar, and Dijon mustard in a small bowl and season with
kosher salt and freshly ground black pepper. Add to the macaroni mix and toss until evenly coated.
Season with more salt and pepper to taste and refrigerate for 1 hour before serving. Sprinkle with
chopped parsley to add a little color if desired.

This is a party recipe -- it makes a lot. You might want to cut it in half. If you don't like macaroni salad, you might want to divide by zero, heh.
