Easy, amazing way to cook witloof (Belgian endive). Wash endive and dry well. Cut endive in half lengthwise. Heat a wok very hot, then add olive oil. Sprinkle endive with sea salt and freshly ground pepper and sear briefly on both sides, just until brown. Dress with balsamic vinegar and enjoy as a salad or side dish.
