Apples love cardamom. Have you used Ceylon Cinnamon, by the way? Different from what's sold in the U.S. as cinnamon, which is actually cassia.

The key with apple pie is to let the apples drain after being dressed with sugar/spices. Then reduce/thicken the liquid and add it back to the apples.

I find the "true" cinnamon kind of cedar-like. More heady. I like using cassia in some savory dishes.

The taiko drummers were *fantastic* Japanese men / women drummer / dancers. Amazing stuff. Looks like they've been around awhile. Here they were at Kennedy Center a few years ago... www.kennedy-center.org...
