A viking ship appears on the horizon, a likeness of Loretta Lynn carved into its bow. Rare birds flock together to sing Francoise Hardy as soul hits. A sunset of blips and bleeps fills the air.

Good morning, Trouble. How about playing "Billie's Theme" by by Hoyt Axton. Now there's a tune to start off a good old fashioned melancholy Tuesday with.

DCP - Who's the Merton Parkas? Sounds mod.

Avatar Tue. 2/19/13 10:09am dale:

Avatar Tue. 2/19/13 10:09am Skirkie:

I didn't know you needed a chicken license. Congratulations on the chicken license.
Avatar Tue. 2/19/13 10:09am Rev. Turnip Druid (xBSI):

I enjoy the phrase 'chicken license.'
Avatar Tue. 2/19/13 10:10am Vivian:

Yay, chicken drama resolved! Though, I'm interested in why the big guns were required..
Avatar Tue. 2/19/13 10:10am dcp:

I'm going to get a seitan license. Do they have those?
Avatar Tue. 2/19/13 10:12am Cheri Pi:

I need one too dcp- I'm going to make "veel" cutlets soon from scratch, I definitely need a license before I broach that territory.
Avatar Tue. 2/19/13 10:14am Skirkie:

Hail seitan!
Avatar Tue. 2/19/13 10:15am dcp:

oh, you mean wringing out the dough? That takes a while...but worth the time. I generally use a box of gluten.
Avatar Tue. 2/19/13 10:15am BigLankyGeordie:

Speaking of chickens, me and my brother just chickened out of of a mountain bike ride because it's just too cold over here. Love the show - can you give us a shout out for being your wimpiest listeners - Michael and Vincent in Yorkshire, England.
  Tue. 2/19/13 10:15am stu:

Morning Trouble! Show is for the birds today ( but music is swell ) I feel naked without photo next to name. yikes Cheers!
Avatar Tue. 2/19/13 10:16am Vivian:

yum seitan! I agree, homemade is tremendously better than store-bought. Question-any luck freezing seitan?
Avatar Tue. 2/19/13 10:17am dcp:

I freeze everything. Froze seitan a bunch of times--especially when I make a giant batch. Totally fine.
Avatar Tue. 2/19/13 10:17am Rev. Turnip Druid (xBSI):

I was pleasantly shocked at the canned curry-gluten available at a korean supermarket up in the suburbs: wasn't bad. In fact, now the craving has started...
Avatar Tue. 2/19/13 10:18am Vivian:

@dcp - do you freeze it in the broth?
Avatar Tue. 2/19/13 10:19am dcp:

mmmm canned gluten.....

Vivian: I usually remove from broth and freeze both separately. Broth makes a great gravy.
Avatar Tue. 2/19/13 10:21am Rev. Turnip Druid (xBSI):

seriously dcp: I was expecting a total horror, but add a bunch of veg & rice and it was damned near acceptable.
Avatar Tue. 2/19/13 10:22am Jennique:

Congrats on the chicken license. Just in time for the high-season Easter rush, no?
Avatar Tue. 2/19/13 10:23am other eddie:

mazel tov, trouble! happy to hear your alt family has finally been officially sanctioned. considering the bureaucratic nonsense you just went through, though, I suggest you keep it on the qt if two of your hens ever want to have an egg together.
Avatar Tue. 2/19/13 10:23am dcp:

why don't we have one of those Korean Supermarkets in the city, dammit! If it's too far to go on my bike, I ain't going there....
Avatar Tue. 2/19/13 10:24am Cheri Pi:

My recipe calls for vital gluten flour, and then just baking it-no dough wringing for this gal. I love the canned "duck" "meat." it
s terrific in soups.
Avatar Tue. 2/19/13 10:25am Rev. Turnip Druid (xBSI):

exactly, dcp. It's the one up north of Wheaton, which might as well be Nova Scotia.
Avatar Tue. 2/19/13 10:26am pierre:

I'd love to get some seitan knowledge as well… if you guys have any advice, i'll take it
Avatar Tue. 2/19/13 10:26am Cheri Pi:

Oh, and those "ribs" you can make with peanut butter and gluten flour- try it for your next McFib sandwich,
  Tue. 2/19/13 10:27am kwhitehead:

Love this song. Can't figure out where I've heard it before. Is it on a compilation?
Avatar Tue. 2/19/13 10:28am Cheri Pi:

this is a new song- by a newish band.
Avatar Tue. 2/19/13 10:29am pierre:

One day I walk into a bio shop thing, and the shop owner said "naaah, making seitan is a pain in the neck, you should buy those (pretty expensive) ones instead…" I was all "damn ! I'm sure it's cheaper to make some by myself…" (in my head)
Avatar Tue. 2/19/13 10:30am dcp:

pierre: not sure what you can get in Europe but here you can buy a box of Vital Wheat Gluten as CP says and then basically just mix it with water. Then you boil it in a broth for a while.
Avatar Tue. 2/19/13 10:30am Cheri Pi:

Try this Pierre: www.theppk.com...
Avatar Tue. 2/19/13 10:30am dcp:

...but you need a seitan license....
Avatar Tue. 2/19/13 10:31am dcp:

or you could follow CP's link...
Avatar Tue. 2/19/13 10:31am pierre:

thanks friends ! I'll try that, as soon as i'm hungry.
Avatar Tue. 2/19/13 10:32am Cheri Pi:

The link is just for looking-don't follow the recipe until you're licensed, local laws apply...
Avatar Tue. 2/19/13 10:33am G:

@pierre: seitan is an Asian term for wheat gluten, which is what's left if you soak all or wash all the soluble starch/carb out of some wheat flour or similar. it's protein, and nutritionally pretty similar to tofu, which is the protein part of soy. it's used in many cuisines where meat is not used, because it gives you concentrated protein to eat. many Asian "mock" meat" dishes use seitan/gluten...
Avatar Tue. 2/19/13 10:34am dcp:

I approve of what G just said.
Avatar Tue. 2/19/13 10:35am pierre:

thanks G, (i had some before in veggie restaurant, with my veggie friends) but never tried make some before.

But you need a license to make some ?! how weird…
Avatar Tue. 2/19/13 10:37am dcp:

yes do not attempt without acquire the proper license first. Of course, you could just bribe the wheat officials...
Avatar Tue. 2/19/13 10:38am Rev. Turnip Druid (xBSI):

Freakishly hungry now. Maybe if I let this tea steep more, it will become food.
Avatar Tue. 2/19/13 10:38am tim from champaign:

Hey Pierre, how was the Kraken?
Avatar Tue. 2/19/13 10:40am Ike:

You should need a license to make up skronk about needing a license for things. OK, I'm going to get my license for hugging penguins now.
  Tue. 2/19/13 10:40am Listener Schned:

Bonjour a tout! Anybody know qu'est-ce que passe w/Yelle? Except for an EP, yelle.fr is "dead" (??)
Avatar Tue. 2/19/13 10:41am Richard Nixon:

Fun show, Trouble!
Avatar Tue. 2/19/13 10:41am pierre:

@ tim from champaign : it was a delight, i'm not into rum at all, but the smokee/toffee taste of this one… it's grand ! It was released properly.

@ listener Schned : it works here (maybe 'cause it's Paris… i don't know)
Avatar Tue. 2/19/13 10:43am G:

in the US, the federal government has made tons and tons of rules/regulations over the course of the 20th century about food (or licensing for who is allowed to do it) that carry legal force. often the rules reflect mainstream food assumptions of many decades ago, or were intended to protect the "standard" way things were being done in a particular food industry, under the guise of protecting people from "bad" food.

so we have to be careful about advocating a food-prep method in public that might get us or someone else in trouble. -- i know the EC has tons of food regs too now, pierre -- you should check up on those, so you know what you're ignoring if you feel like it :-)
Avatar Tue. 2/19/13 10:44am Cheri Pi:

whoa, you can make Seitan kraken????
Avatar Tue. 2/19/13 10:45am Rev. Turnip Druid (xBSI):

or, hell, tofu whiskey.
what could possibly go wrong?
Avatar Tue. 2/19/13 10:45am dcp:

Cheri, that's illegal in this country but I've heard of counties in Montana where they allow "mock Seitan kraken"..
Avatar Tue. 2/19/13 10:46am dcp:

for music that is NOT my cup of tea, this kindra morris tune has a powerful effect on me...
Avatar Tue. 2/19/13 10:47am pierre:

I (obviously) wasn't aware of that G. thanks for the info. I'll go and make sure to know those rules.

@ Cheri Pi : I've tried it, it's fantastentacular !
Avatar Tue. 2/19/13 10:48am PKNY:

@dcp - the whole Kendra Morris record is pretty good. And she released a pretty ill cover of Metallica's "Ride the Lightning" online last year.
Avatar Tue. 2/19/13 10:49am Cheri Pi:

*sigh... Montana has everything. I'll have to make due with Origami Krakens for now.
Avatar Tue. 2/19/13 10:52am Rev. Turnip Druid (xBSI):

Don't let the chickens know. They're very bureaucratic. They don't let just ANYONE make seitan.
Avatar Tue. 2/19/13 10:52am Van in DC:

Chicken eggs? Bah. Gimme Alien eggs any day.
Avatar Tue. 2/19/13 10:53am Vivian:

Cheri Pi, my first attempt at seitan is based on the recipe off of the post punk kitchen. Crazy!
Avatar Tue. 2/19/13 10:54am Ike:

Trouble is correct. Pierre, although we do have some crazy food regulations here, G is indulging in wild libertarian exaggeration by suggesting you are restricted as to what you can make in your own home for your own use.
  Tue. 2/19/13 10:54am ~L:

Yay you got your chicken license! Did you have to send the chickens on vacation while you waited for it to come through?
Avatar Tue. 2/19/13 10:56am ffrr:

I thought of that film when I saw today's subject heading. Yeah there's some crazy singing in that flick. Good call T.
Avatar Tue. 2/19/13 10:56am Trouble:

yes ~L, i am going to pick them up right after i get off air!!

Greetings from Hamburg/Germany

Re: S.Ray. Sometimes every shot in his films is like a beautiful still photo. It's amazing.
Avatar Tue. 2/19/13 10:58am pierre:

In here we must have license if somebody sell something in the street, but even that is really not very controled.
Avatar Tue. 2/19/13 10:58am Jennique:

Wow, here at the American Museum of Natural History, the special exhibit that's up now is Our Global Kitchen. It covers everything food, including a recreated Aztec market, ethnographic kitchen utensils, hydroponics and a tasting room. More here...

Avatar Tue. 2/19/13 10:59am listener mark:

A license to raise chickens, chicken wrangler, chicken rancher, chicken farmer, chicken herder, chicken keeper?
Avatar Tue. 2/19/13 11:03am Lewis:

@Rev Trunip Druid - pretty sure that huge portions of the world are what you are looking for... but let us not forget the correlative intestinal distresses....
Avatar Tue. 2/19/13 11:04am pierre:

this land is called the 13 disctrict (or chinatown) of Paris Rev. Turnip Druid

I shall forge a passport immediately. Intestinal distress and liberty go magnificently hand-in-hand. I'm on my way.

If I get too smart-alecky at the boat yard, the crew wraps a chain and anchor around my neck, hence my avatar.

@other eddie - I know! It makes me cringe a little, though. Looked like it hurt.
Avatar Tue. 2/19/13 11:37am G:

pierre 10:58 is correct. :-) There are tons of laws/regs, and they are not enforced consistently, because the backlash would be incredible if they were.

My grandfather was an executive-branch federal administrative law judge, appointed under Truman. I actually kinda do know how federal regs are made, function, and enforced, and what the overall history and development of that area of law is. :-)
