I hate to be a tease, but if I lived up there I would attempt to make gluten-free pizza for you. Or acquire one made by somebody else. I haven't had an electric train in close to twenty years. People still give me Lionel Trains-related gifts [which I do not need]. |

I actually made a fairly successful and exciting one the other day. It was a poor-man's grandma pizza. Round but still grandma pizza-esque. |

So what exactly does a "grandma pizza" consist of? 'Cause the first time I ever heard of one was when you and Therese were talking about them a few weeks back. I guess the concept hasn't made it to Texas. |

It's a Sicilian pizza (rectangular deep-dish) which has reversed the order of cheese and sauce. Also, NO SAUCE! Instead there are diced tomatoes... and usually garlic. Think that's about it. I made kind of a lumpy circular pie since I don't have a fancy square pizza-magic dish. But it was really tasty. |

FYI: ROVA Saxophone Quartet is the artist on the previous track. The track is called "Grace" and it's from a various artists collection called "Transparent Messenger - Prusvitny Posel." I was tring to find where it came from as it had a John Zorn-ish quality. I want to check out more from Rova SQ. |

Hmm...Chicago deep dish is like that [cheese on the bottom with diced tomatoes on top]. Is it a regular thin crust or is it more akin to a pan pizza [though not necessarily deep dish]? |

Yeah...I found the album info on ROVA's site then used that to track down the album on Discogs. Looks like it's not readily available. They didn't have a link to purchase it on their site; none are for sale on Discogs; and Amazon has no record of its existence. |

Chicago pizza is weird. When I was in high school an Uno's opened in Dallas. So for many, many years I thought all Chicago pizza was deep dish. My actual pizza experiences in Chicago have been that thin crust pizza is preferred significantly more than deep dish. They also have a penchant for cutting the pizza into square-shaped slices instead of triangular slices. |
